Hoping to inspire readers to venture out and explore the variety of ethnic foods awaiting them, Halvorsen (The Food and Cooking of China, Wiley, 1996) sets off on a trip around the globe, stopping in different regions (e.g., Latin America, East Asia) long enough to offer a brief description of the native cuisine and a sampling of recipes. Occasionally, she includes a brief interview with a U.S. chef specializing in the food of a particular country, and she inserts a sample menu from an appropriate restaurant in most chapters. A glossary of popular food words is given for some countries, and an appendix provides a directory of food purveyors.
