John Folse is Louisana's authority and ambassador to the world regarding cajun and creole cooking. He is not only a chef, but also an historian and story teller. No one has has a deeper understanding of the influences of cajun, creole and all the many other cultures that blend to make Louisiana's cuisine so unique. Whatever venues he uses -books, personal appearances or TV, he not only gives you the recipes and clearly explains how to prepare them, he also gives you their related history.

I saw this book in New Orleans at a cooking school and thought what a wonderful addition to my library it would be. Beuatiful illustrations and a wonderful history of New Orleans and creole/cajun food. I absolutely love this book

I'm from New Orleans and everyone I know has this cookbook. This is actually my second copy - the first got destroyed in Hurricane Katrina. The recipes are authentic Cajun and Creole recipes. The book has excellent step by step illustrated instructions for each recipe. Especially helpful are the illustrated directions for making the different rues that are the basis for many Louisiana recipes. Not only do you get hundreds of recipes, the book also goes into the history of Louisiana cuisine and each recipe. Great gift! Just be warned - the book weighs about 10 pounds.

If you love to cook,this is the book. Not ouly does it look good on the coffee table but the recipes are so easy to follow. I love to cook and this is a great base to start. I have given this to my boys, friends, and customers. You will never regret having this book,trust me.I live in the Colorado Rockies and everyone that I given it to is blown away!

You will enjoy John Folse's book on Cajun and Creole Cuisine. Great history and fabulous recipes. The pictures in this book are beautiful and take you right down to Cajun/Creole country. This is a great book to keep in your library and have handy in the kitchen. You will be inspired. Bonne Appetite

I was a regular viewer of John Folse's show (same name as the cookbook) on PBS until the series ended. I was very impressed, and had to buy the book. The book is huge and weighs about ten pounds. I was VERY satisfied with Barnes & Noble's shipment of the book. It arrived in a few days! The book itself is the MOST COMPREHENSIVE "Encyclopedia" of Cajun and Creole Cuisine I have ever seen! I have been buying books for years, and this book is truly the "showpiece" of my collection. I went to New Orleans for Mardi Gras and bought another of John Folse's books (which was diminuitive, compared to "Enclopedia..."). My next book will be "After the Hunt". I am truly impressed by the layout of this book. Heavy, glossy pages, full of photos, easy to use recipes. If you are interested in Cajun and Creole cooking, don't waste your money on other books. Spend a little more and buy this one. It is WELL WORTH EVERY PENNY! (And you won't have to buy any other Cajun cookbooks!) I usually don't write reviews, but I have to let people (who are interested in this book) know what a real value it is! Before buying it from Barnes & Noble, I checked other sites, and was VERY IMPRESSED with Barnes & Noble's ability to acquire the book (It is not i stock in ANY BOOKSTORE in the Boston area), and to ship it at such an affordable price. I will check Barnes & Noble's prices in the future before buying books elsewhere!

I have the opportunity of being able to view Chef John Folse live on tv several days a week. Not only is he a great chef, but is very comical at times along with his tv anchor person who is on hand with him in the kitchen. I received my copy for a Christmas present and have used it numerous times since. My father-in-law makes an annual trip to Idaho every summer and plans to take several copies with him to his friends there this year.

This is a beautiful book. It has over 800 pages. It is filled with beautiful color photography and images, many of which are full page. Inside are hundreds of spectacular traditional Cajun and Creole recipes. Also, this book contains a large amount of history about the diverse peoples and cultures that make up the people of Louisiana. The many people that make up the Gumbo pot, not melting pot, of Louisiana.

This is a beautiful book!

This book is a magnificent presentation of the history of cajun and creole cooking. The pictures will make your mouth water and the recipes and instructions are written (and some pictured) in such a manner that they enable the most novice of cooks to be able to prepare almost anything in the book. I purchased the book for my collection and will be ordering a few additional copies to give as gifts.

an absolute gem! as a life long resident of the Mississippi Gulf Coast--this book does the very best job of giving the history of the cuisine along with recipes ranging from the basics (how to make a roux) to the sublime! a must for any cook and it makes a great gift!!

Anyone would just LOVE to have this cookbook, especially if you're from South Louisiana. The recipes from Chef John Folse speaks for themselves and I have found them to be fool-proof. Born a South Louisiana girl, the food recipes, history, and local restaurant detatil strikes a nice and cozy feeling in me. NOLA is a place like no other. The history collection in this encyclopedia is OUTSTANDING. A job most definately well done. Thanks to Mr. Chef Folse and to your team. I did order this for a wedding gift and thought I would wrap it and mail it to them, however, the shipping would be very expensive. I suggest due to the weight of this book, have Barnes and Noble send it as a gift.

I have purchased 9 of these books over 1 1/2 years. Each time I gave the recipient his or her copy, they show their friends who then buy their own. The recipes are great. Mr. Folse is a well-known chef here in Louisiana. His recipes are usually easy to make and of course, turn out great. Have no fear. This book is great to put on a coffee table as well as a great reference book. Enjoy.

Has a wealth of information, including a wide variety of recipes encompassing creole and southern cooking, and louisiana history. Most other sites sell this for about $75 - $80 and it is worth it at that price.
