Enlightened Chocolate" is the first volume in the Enlightened Cooking series. Including both savory and sweet chocolate recipes, it is the first compendium cookbook exclusively devoted to light chocolate recipes. It also offers guidelines for using chocolate and cocoa as multipurpose flavorings to deepen and enhance dishes while adding health benefits. The recipes are divided into five chapters:
• Morning Chocolate Fix
• Sublime Snacks
• Main Dish Chocolate
• Decadent Desserts
• Sweet & Savory Extras (including sauces, spice rubs, salsas, and other condiments)"
Saulsbury is the author of half a dozen other dessert cookbooks. This one, the first in a new series, touts the antioxidant properties of chocolate, and she has used cocoa powder and dark chocolate, along with low-fat dairy products, to make desserts that are low in fat and calories (nutrition information is given for each recipe). She also includes a chapter of savory dishes made with cocoa or chocolate. Alice Medrich's Chocolate and the Art of Low-Fat Desserts(now o.p.) offers a somewhat more sophisticated approach, but Saulsbury's book, with its up-to-date information on the health benefits of chocolate, is recommended for larger baking collections.

What a find--this is a beautiful book with easy, sophisticated recipes. I learned so much about chocolate from the front end material 'history, health benefits, techniques', but is the recipes that are brilliant here. I've made the exotic truffles several times already 'they were the stars of my kitchen Christmas gifts' the Mexican chocolate thins are equally to-die-for, and several of the easy chocolate breakfast ideas have become standards in my morning repertoire (e..g., chocolate yogurt with fresh berries and the chocolate schmear). The savory chapter is nothing short of cutting edge. Wow. This is an essential chocolate book.
