Almond-Apricot Chicken with Mint Pesto
The addition of goat cheese, apricots, and pesto lends a Mediterranean flavor to chicken. The pesto is made with fresh mint and almonds, rather than the usual basil and pine nuts.

Serves 4
Prep Time: 30 minutes
Total Time: 50 minutes

Ingredients
4 boneless, skinless chicken breast halves (6 ounces each)
1⁄2 cup sliced almonds
2 ounces goat cheese
4 dried apricots, cut into 1/4-inch pieces (3 tablespoons)
Coarse salt and fresh ground pepper
1/3 cup plain breadcrumbs
1 large egg, lightly beaten
1 tablespoon olive oil
Mint Pesto (recipe below)
To Prepare the Chicken
1. Preheat the oven to 375°F. Cut a slit in one side of each chicken breast to create a pocket about 4 inches long.
2. In a small bowl, combine 1/4 cup of the almonds with the goat cheese and apricots. Stuff each breast with one quarter of the mixture. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
3. On a plate, combine the breadcrumbs and the remaining 1/4 cup almonds. Dip each breast into the beaten egg, then dredge in the breadcrumb mixture.
4. Heat the oil in a large ovenproof nonstick skillet over medium heat. Cook the chicken until golden, 3 to 4 minutes on each side. Transfer to the oven; bake until cooked through, about 15 minutes. Serve hot with the mint pesto on the side.
Mint Pesto Ingredients
3 cups lightly packed fresh mint
1⁄4 cup sliced almonds
1⁄2 cup extra-virgin olive oil
Coarse salt
To Prepare the Mint Pesto
1. In a food processor, combine the mint and almonds; process until finely chopped.
2. With the motor running, gradually pour the olive oil through the feed tube. Season with salt. Keep at room temperature until ready to serve. Store leftover pesto in a sealed container in the refrigerator for up to two weeks; let it come to room temperature before serving.

Regardless that I am a Martha Stewart fan, this book is a wonderful collection of comfort food recipes. I am SO glad my neighbor bought it for me.

The Cashew Chicken is excellent. It's incredibly simple, fun to make and since I've discovered this particular recipe, I've probably made it a half-dozen times. I am making 1 or 2 recipes per week and have yet to find one that disappoints.

Filled with beautiful, enticing photos that accompany each of the tasty, easy to follow recipes this is a great book to add to your cookbook collection or to give as a gift! I love that this book is organized by season; focusing on fresh, easy to find ingredients. Each recipe is simple enough for a beginner to cook but delicious and varied enough to satisfy any appetite. With a selection of Main Courses, Sides and Desserts for each of the four seasons the book contains a great foundation for delectable home cooking and inspiration for daily meals throughout the year.

Great Food Fast is an easy to use cookbook with a wide variety of ingredients and flavors. The beautiful photography is true to life, the finished dishes really look like the photos. I have made several recipes from the book and all have turned out O.K. The preparation is fairly simple and quick as indicated but the flavors leave something to be desired, not a lot of impact. I do like the way it is sectioned by seasons. There are many, many more recipes to try but I may start adding more flavors based on what I've tried so far.

I purchased this cookbook for someone in grad school. He seemed very pleased about it since he recently likes to cook but has little experience. The book has a nice selection of recipes with easy to use and clear instructions.

This book is AWESOME!!! A must have for every skill level. Recipes are simple, QUICK, and delicious. The organization of the book is very useful- recipes are arranged by season and include salads, mains, sides, and desserts. The recipes are all quick and most importantly TASTE GREAT. This cookbook is great! The recipes are simple and easy to follow. My girlfriend gave it to me as a Christmas gift in an effort to get me to cook more. I recently prepared her a Valentine's Day dinner from this book (Chicken with Carrots and Onions, Grilled Toast Salad) and she loved every bite! We have gone through and marked the individual recipes that we like and are cooking them off one by one.

I wasn't looking for a new cookbook when I picked this up off the shelf, but I had to have it. And I have not been disappointed!! Every recipe that I've tried has been so full of flavor. They have all been pretty easy to make, and the ingredient lists aren't too long or hard to find. I've got several cookbooks, and none of those recipes are this easy or tasty. For the most part, they're pretty healthy recipes, too. I feel like I'm eating in a restaurant when I cook out of this book!

I LOVE LOVE LOVE this cookbook! I use it weekly and have enjoyed the adventure in cooking. The recipes are easy and tasty, they don't require to many ingredients and are pretty easy to find to make the recipe. Prep time is usually no more than posted and cooking time has been right on for me. My husband is always (with a mouth full) saying WOW this is awesome what's tomarrows dinner. For those who want to cook more healthy dinners in a flash this cookbook is just for you....I can't wait for the next book.

My husband is enjoying this book. He's my taste tester and I make a different recipe everyday. Really easy recipes that are quick and delicious. I always loved the Everyday Food magazine. This is like a bigger magazine with even more recipes, a picture of each one and no advertisements. I'm making a roast right now. I'm looking forward to the next book.

I LOVED this cookbook. What was so great about it was that every dish had a picture, so I knew what I was cooking. The recipes are grouped by season, so you'll be grilling in the summer, and using rich flavors in the fall. The recipes are delish!! Some of the recipes were a little too far out, but that's my only complaint. Also, ignore the prep time.

I have many cookbooks and I love to cook. The book is wonderful because the recipes have only a few ingredients (usually), ask for more 'fresh' foods, do not take long to prepare, and taste wonderful. I have not had one bad meal from this book. Sometimes it is hard to decide what recipe to make! Have bought these books as gifts.
