Barbara Beery combined her natural talents for cooking and teaching to create Batter Up Kids, a children's cooking school, in 1991. She has a bachelor's degree in elementary education from the University of Texas, and spent 13 years teaching 2nd and 3rd grades and pre-school children ages 3 to 5 years.

Barbara Beery holds a bachelor's degree in elementary education from the University of Texas and is an active member of the International Association of Culinary Professionals (IACP). Barbara is a bestselling cookbook author, entrepreneur, and experienced spokesperson.

Rainbow Confetti Parfait

Ingredients List

2 cups milk

1/2 cup sugar

3 tablespoons cornstarch

1/4 teaspoon salt

1 teaspoon vanilla

1 tablespoon butter

Assorted food coloring

Whipped cream and rainbow sprinkles for garnish

Colored mini marshmallows for garnish

Makes 4

In a medium saucepan over medium heat, heat milk until bubbles form around the edges. In a bowl, combine sugar, cornstarch, and salt. Pour sugar mixture into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, and stir in vanilla and butter. Divide pudding equally into three bowls and tint each portion with a different food coloring.
Color one pink, one green, and one yellow. Divide evenly among parfait glasses, layering each pudding color. Cover and chill at least 2 hours before serving.

Garnish with a dollop of whipped cream and rainbow sprinkles.

    Cute and fun cookbook

    I purchased this for one of my nieces, and my sister used it to host a fairy tea party for both nieces, ages 3 & 4. She cooked six or eight of the recipes, and most of them turned out very well. Both girls had fun helping to cook and eating the "fairy food". The only recipe that wasn't a hit was the ice cream cupcakes - the ice cream icing was not enjoyed by anyone.

    Fun Cookbook For Little Girls

    I got this cookbook for my friend's daughter for her birthday. She is 7. The cookbook has wonderful pictures of whimsical recipes with fun names and yummy ingredients. Most of the recipes are deserts, but perfectly for a little girl who likes to be a girly girl. The recipes have between 5-10 ingredients and are great for learning how to cook with help from mom or a special older friend. You won't be able to cook a meal with this book, but it does have fun recipes for special occasions or a tea with friends. Made me wish I had a cookbook like this when I was a kid.
