    Not a bad book

While this book is straight forward and simple I have had issues with some of the recipes.
For example; Pineapple vinegar takes a lot longer to make than the recipe states. I have also made the cottage cheese using the recipe in the book and found I had to add one more step before it looked like cottage cheese.

I would recommend that anyone purchasing this book check out other recipes online to make sure none of the steps are missing.

Don't be put off buying it. It's inexpensive compared to a lot of books out there and I have had a lot of fun making stuff from different recipes.

Judging a book by its cover is a definite with this piece. Fermentation is an art and Drakes Press delivered with their well researched, well written history and procedure process of this art. I never knew personally that sourdough my favorite style of bread and other food groups go through this process. But I guess that is no surprise seeing as i'm a westerner and most of the food in the grocery markets nowadays are processed. But I digress the science behind fermentation as well as probiotics is a health staple everyone should enable in their personal lives. I know i will and i will definitely pass on the knowledge to aspirants of this gnosis soon to come.

Before I read this book, I was completely oblivious to the process of fermentation and the benefits of it. I honestly thought that only wine and beer could be "fermented". I also, had no clue how probiotic foods were created from this process! Throughout many years, generations, and cutltures, people have relied on fermentation for their very survival. This is a subject that is rarely discussed yet possesses much importance! For that reason, this book should be in the library of every person who wants to live a probiotic life!

Drakes Press made fermentation, a topic that very few know of or practice and coagulated it into a very easy read. This text illustrated an easy practical application of the fermentation process for my kitchen. Long is the process for some recipes i will definitely be experimenting soon in the science behind fermentation and the process of preservation. Once again i drakes press compiled their thoughts well into this book and will definitely be referred to more in the future

Fermentation made easy. I am trying to eat healthier now that I am older and had heard eating
fermented foods was great for my immune system.  The book is great because it tells you how
the fermentation process works and gives you easy recipes to try. It even tells you the best foods
to buy and explains the health benefits of fermentation. Recipes are great and much easier
    than I expected.

I didn't know about this subject before I got his book. I've learned so much. Everything
from the history to how to do it at home. Anyone can do this themselves and most
of the instructions are great, but some are a little intimidating. For instance,
the sourdough bread seems very complicated. At the end of the day, I would
recommend it for anyone and everyone interested in this subject.

Probiotics, the science behind fermentation, has recently become

Probiotics, the science behind fermentation, has recently become a buzzword in culinary circles. This instructive book by Drake Press helps demystify fermentation by breaking down the assorted food and beverage categories that are products of this ancient culinary practice. The book clarifies in the early chapters what fermentation is and isn’t: sauerkraut, kimchi and homemade pickled vegetables, meat and fish are the products of fermentation, but many commercial pickled items that have been submerged for a period of time in vinegar are not. The book also explains the various health benefits derived from a diet rich in fermented food and drink, including improved digestion, a reduction of stiff or swollen joints and better oral hygiene because of the eradication of harmful bacteria. The second part of the book includes an amazing collection of recipes that are relatively straightforward, and with a modicum of science and patience required, a fascinating departure from most culinary endeavors.

So excited to have a basic guide to fermentation! I have read many articles on the health benefits of home made probiotics and have been thinking about doing this for a while. I am anxious to try the detailed recipes that include time frames, temperatures, and indicators. Fresh seasonal foods are recommended, but I am happy to have the manual on hand for spring farmer’s market fare.
Grandma’s recipes for sourdough starter and sauerkraut were very vague and she’s not here to guide me. This book will be a big help!

An interesting book with informative and clear instruction for fermenting all kinds of foods. Looking forward to summer veggies, eggs, meats, fish and even dairy products to try a variety of recipes provided. Not all recipes seemed "easy" but many were and all offered a healthy option to store bought equivalents. It sounds like a fun adventure to jump on board.
