    "Fiesta Mexicali" - What a delightful pleasure!

    Looking to get acquainted with serving Mexican cuisine and don't know where to begin? The colorful book "Fiesta Mexicali" is a great place to start. After a trip to Las Cruces, New Mexico I was inspired to purchase a Mexican cuisine cookbook, but I did not want to be overwhelmed. Author Kelley Cleary Coffeen presents recipes that are approachable for the novice yet still interesting for the well seasoned chef. Excellent photographs of the dishes makes the book that much more enjoyable. Within the 121 pages I found great takes on cocktails, salsas, appetizers and dishes that will enliven any gathering. A special find for me was the variety of "spirals" using soft flour tortillas rolled up with different cream fillings and cut into spirals which the author likens to miniature tea sandwiches. Also, check out Ms. Cofeen's take on Chile Rellenos with the dish called "Relleno Tarts" made ahead of time in a mini-muffin pan! And what a nice surprise to find tips for decorations, music, lighting, table linens, party gifts and so much more! The creative selection of Mexican style cocktails will make every fiesta complete. A "Dulce de Leche Martini" using rum, cream and carmel sauce is one of my favorites. "Cactus Colada" with coconut flakes, tequila, coconut milk, pineapple juice and juice of limes is a winner, too. I would recommend this book for both personal use and as a gift.
