Meet the Author

When Kati Neville went back to work after the birth of her first child, she learned to put home-cooked meals on the table every night by filling her freezer with make-ahead dinners. In 2002, she created Make and Take LLC, the first meal preparation service in the Portland, Oregon, metropolitan area.


Lindsay Tkacsik has always loved cooking with a wide range of foods and flavors. She brings her enthusiasm for bold tastes to both her meal preparation business, Mealtime Solutions, and her cookbook writing. Lindsay lives with her husband and three daughters in Washington.

I like the idea of make-ahead freezer meals for saving time and money, especially when the focus is on healthier recipes that don't rely on condensed "cream of" canned soups like other cookbooks of this genre seem to, which is why this one appeals to me. The authors have put together a good collection of easy to make, sensible recipes that use regular fresh ingredients I can find in my local grocery store. We've enjoyed the Urban Garlic Chicken (crock-pot version) for a great Sunday dinner, and the Honey-Glazed Chicken Thighs. Other recipes I'll try include Party Enchiladas, Teriyaki Chicken, Cream of Mushroom Soup, Mozzarella Meatballs, and Beef Fajitas. Included are tips for make-ahead menu planning and cooking plus chapters with recipes for chicken, beef, pork, vegetarian dishes, sauces, marinades, flavored butters, breakfast, snacks, and sweets. There are no photos which is the only negative, but it really doesn't detract from the good recipes. The book also includes labels for the recipes that can be photocopied, or one can go to the publisher website and download a printable file. I received a copy of this book for review from the publisher but the opinion of it is my own and was not solicited, nor was a positive review required.

This is a GREAT cookbook. I have a totally stocked freezer right now and just love it. It is easy to make some simple changes, i.e. packaging in smaller portion sizes, etc. I plan to get a few friends together and each pick one or two recipes and then swapping for some more variety. You do use a LOT of Ziploc-style bags though. I hope to get together with my Tupperware lady to cut down on the packaging waste.

This book is easy to read with many helpful hints on cooking ahead and freezing meals. Not just a recipe book ...this is a cookbook.

I bought this book three years ago along with 3 other similar books.  It has become the most frequently used cookbook in the house.  I've barely cracked the other three because I keep coming back to this one.   The recipes are easy enough to involve the kids (when making 6lbs of meatballs you want help) Though a couple of them do take some muscle and REALLY big pots.  It's worth the extra effort to have good healthy meals tailored to the family's tastes on hand all the time.

We do not have access to big box stores, so much of the info is not as helpful as I would have liked. I think some of the ideas still should work though.
