A word about slowcookers
Slow cookers have proven to be the efficient friend of those cooks who are gone all day, or who don't want to be occupied in the kitchen for hours, but want to offer substantial home-cooked food to their households.
You can prepare a dish one evening, store the filled "lift-out" vessel in the fridge overnight, and then place it into its electric component in the morning as you do your dash to the door. Or you can tote the whole works to a buffet or carry-in meal, doing no damage to the quality of its contents.
These great little appliances can vary considerably in their heat intensity and speed of cooking. Older models often require more cooking time than newer ones. That's why I give a range of cooking times for many of the recipes. Experiment by using the shorter cooking time first. Then make a note right on the recipe page itself about what you discovered works best for your cooker. Personalize this cookbook.

Ideal slow-cooker sizes
The ideal slow-cooker size given with each recipe is just a suggestion. I went big in most cases so that you aren't faced with a pot that's running over. (On the other hand, be aware of the fact that your food may get too dry if your pot is less than half full.)
Some raw vegetables stand up and take a lot of room. As they cook, they quiet down and sink together. So some recipes with an abundance of uncooked vegetables suggest a larger cooker than other recipes which yield the same number of servings.
Slow cookers are great for carry-in meals and pot-lucks. But who wants an overflowing pot in the back of a vehicle? So, again, I tilted toward the larger size.

Variables to keep in mind
Ideally, you should fill your slow cooker about ²/³ full. You may need to increase the cooking time if you've exceeded that amount, or reduce it if you've put in less than that.
· The fuller your slow cooker, the longer it will take its contents to cook.
· The more densely packed the cooker's contents are, the longer they will take to cook.
· The larger the chunks of meat or vegetables, the longer they will take to cook.
If you put ingredients into the cooker straight out of the refrigerator, you may need to add 20-30 minutes to the suggested cooking time.
If you put frozen meat into the cooker, you should add 4-6 hours of cooking time on Low, or 2 hours on High.
If you're using a slow cooker at an altitude over 3,500 feet, you will need to cook its contents somewhat longer than the recipe states. Allow time to experiment, and then write what worked next to the recipe.
If you want to check that the meat in your slow cooker is fully cooked, use a food thermometer:
· Beef should reach an internal temperature of 155°-160°?F.
· Pork should reach an internal temperature of 155°-160°?F.
· Poultry breasts should reach an internal temperature of 160°?F; poultry thighs 175°?F.

Converting recipes for slow-cooker use
Many stove-top and oven recipes can be adapted for a slow cooker. If you want to experiment, use these conversion factors:
· Low (in a slow cooker) = 200°, approximately (in an oven).
· High (in a slow cooker) = 300°, approximately (in an oven).
· In a slow cooker, 2 hours on Low = 1 hour, approximately, on High.

Consider the wonder of owning slow cookers of varying sizes
Slow cookers do their job famously well, whatever their size-1-quart, 3-quart, 6-quart, or in between. Little ones work well for singles or doubles, or they cook the vegetables while the beef burbles away in a bigger cooker, sharing the same counter-space. In fact, you can do a whole meal in slow cookers, thereby multiplying the pleasure without significantly increasing the work. Just be alert to the lesser amount of cooking time needed by the small cookers. (Check the instruction manuals to get the cooking time right.)

"Light" recipes
You'll notice that some of the recipes in this book include nutritional analyses. These are the dishes to prepare when you're looking for light and healthy eating.

Calculating the nutritional analyses
The recipe analyses for these recipes are based on the lesser amount of an ingredient when a range of amounts is given. Optional ingredients are not included in the analyses. Only those items on a recipe's list of ingredients are part of that recipe's analysis. (If a recipe's procedure or notes suggest serving it with pasta or potatoes, for example, those foods are not calculated in the analysis.) The serving sizes are quite modest in these recipes, all in an effort to assist with portion control.

Recipe

Convenient Slow Cooker Lasagna
Rachel Yoder Middlebury, IN
Makes: 6-8 servings
Prep. Time: 30-45 minutes
Cooking Time: 4 hours
Ideal slow cooker size: 6-quart

1 lb. ground beef
2 29-oz. cans tomato sauce
8-oz. pkg. lasagna noodles, uncooked
4 cups shredded mozzarella cheese
1½ cups cottage cheese

1. Spray the interior of the cooker with nonstick cooking spray.
2. Brown the ground beef in a large nonstick skillet. Drain off drippings.
3. Stir in tomato sauce. Mix well.
4. Spread one-fourth of the meat sauce on the bottom of the slow cooker.
5. Arrange one-third of the uncooked noodles over the sauce. (I usually break them up so they fit better.)
6. Combine the cheeses in a bowl. Spoon one-third of the cheeses over the noodles.
7. Repeat these layers twice.
8. Top with remaining sauce.
9. Cover and cook on Low 4 hours.

Variations:
1. Add 1 chopped onion to the ground beef in Step 2.
2. Add 1 tsp. salt to the tomato sauce and beef in Step 3.
3. Add ½ cup grated Parmesan cheese to the mozzarella and cottage cheeses in Step 6.
4. Add ½ cup additional shredded mozzarella cheese to the top of the lasagna 5 minutes before serving.

Hot Fudge Cake
Evelyn L. Ward Greeley, CO
Makes: 8 servings
Prep. Time: 10 minutes
Cooking Time: 1½-1¾ hours
Ideal slow cooker size: 3½-quart

1¾ cups brown sugar, divided
1 cup flour
3 Tbsp., plus ' cup, unsweetened cocoa, divided
1½ tsp. baking powder
½ tsp. salt
½ cup skim milk
2 Tbsp. butter, melted
½ tsp. vanilla
1¾ cups boiling water

1. In a mixing bowl, mix together 1 cup brown sugar, flour, 3 Tbsp.cocoa, baking powder, and salt.
2. Stir in milk, butter, and vanilla.
3. Pour into slow cooker sprayed with non-fat cooking spray.
4. In a separate bowl, mix together ¾ cup brown sugar and ' cup cocoa. Sprinkle over batter in the slow cooker. Do not stir.
5. Pour boiling water over mixture. Do not stir.
6. Cover. Cook on High 1½-1¾ hours, or until toothpick inserted into cake comes out clean.

Per Serving: 280 calories (35 calories from fat), 3.5g total fat (2g saturated, 0g trans), 10mg cholesterol, 180mg sodium, 63g total carbohydrate (2g fiber, 48g sugar), 3g protein, 0%DV vitamin A, 0%DV vitamin C, 10%DV calcium, 15%DV iron.

Tip: Serve with low-fat ice cream or fat-free whipped topping if you wish, and if diets allow.

    Fix-It and Forget-It Big Cookbook

    I purchased this book for a wedding gift after talking to the bride and finding out that she was not very experienced in using a crockpot. I have my own smaller edition of Fix-It and Forget-It cookbook and have used it for many years and enjoyed numerous recipes from it. This was definitely a great gift, one I was proud to give and knew it would be very useful to a very busy newly married couple. The bride is a co-worker and has already given me very positive feedback from trying some of the recipes.

    I Also Recommend:

    Enormous amount of recipes.

    1400 recipes; however, many are nearly identical or very similar. Best recommended for beginning cooks--very easy to follow. But sheer number of recipes can make it hard to decide what to make.

    I purchased this cookbook for my daughter for Christmas. After looking through it my son decided that we needed the recipe collection for our cooking library. There are recipes for everyone and even the picky eater.

    After our kitchen remodel that took almost a month, my children vowed never to eat anything but soup out of the crock pot. My daughter is in her first apartment and I said that she could not be on her own without a crock pot. I purchased a crockpot and this cookbook for her for Christmas. We spent most of that day looking at recipes and deciding what we wanted to eat. My son told me that we had to purchase this cookbook for ourselves since she was not interested in trading it in for something else. Being a picky eater she still found several recipes she wanted to try.

    Lots ot choose from

    So far I have made five recipes from this book and everyone of them has tasted very good. I like the way the book is divided into categories, such as chicken, beef, soups, desserts, etc. It also shows whether a recipe is "lite".
    I would recommend this book for anyone who is looking for slow-cooker recipes.

    WHAT A WONDERFUL, WONDERFUL BOOK!!!!

    Well worth the money for 1,400 recipes. I have had this book about 3 months and everytime I open it, I see something new. - all of the recipes I have tried thus far have been DELICIOUS! If you have a slow cooker this will become your bible because the recipes are not only very easy, but absolutely WONDERFUL! It is a great feeling knowing that when I get home from a hard day of work, I will have a delicious dinner ready and waiting for me. - all I have to do is set the table, maybe put a quick salad together and pour the drinks!

    Phyllis Pellman Good is a great author and she knows how to write such good recipes. - You won't go wrong adding this book to your collection. Trust me on this.

    Great Book!

    I just love using my crock pot, but hate complicated recipes. This recipe book is full of easy, tried and tested recipes. It's a true keeper of a book!

    Disappointing

    The recipes in this book were repetitive. Ingredients were largely generic, canned and uninspired. Most recipes could be prepared in a much shorter time on top of the stove rather than using a slow cooker. If you are at all good at cooking you could make this stuff off the top of your head without a recipe.

    love this book

    My husband bought me this as a gift and I love it! It is my favorite cook book. The recipes are very simple and easy to follow. So far every recipe that I have tried has been delicious. They also allow you to add your own fling to it. We also talked our friend into buying it for his wife who doesn't cook often and they both have enjoyed it so far.
