This is not just another cookbook, Erdosh offers the history of the period, including a discussion of slavery, limited food supplies during the Civil War, and how the food supply was affected by the end of the war. Each concept is presented simply. Recipes included in this title range in difficulty, but all the necessary ingredients are readily available. A glossary and an index complete the book. Although this series, "Cooking Throughout American History," is aimed at the upper elementary age, it would also be an excellent resource for the reluctant reader at the middle school level. Homeschoolers will appreciate the hands-on quality of the text. Other titles focus on Native Americans, Pilgrims, the Revolutionary War, the thirteen colonies and westward expansion. Each of the titles includes recipes for foods common to that period in history. Elementary social studies teachers will want to include the entire series.
