Easily the best plant-based diet book for beginners. What an eye-opener into the food scams of the Standard American Diet (SAD), all in the name of making a profit. Research shown in this book proves that people are becoming overweight and unhealthy, because of the way most of us choose to eat. An interesting fact from this book is that, “In the United States, one person is killed by heart disease each minute…”.616,067, that is the number of annual fatalities. That is an astonishing fact! A great book for those new to a plant-based diet; it describes what actually constitutes a plant-based diet. With the many different means of processing food, it can be confusing for some to decipher what is truly plant-based, and what may have been processed to resemble a plant-based food. This book unveilsthose large food manufacturers and advertisersthat are fooling Americans into thinking that a pill or eating high protein meat and avoiding carbohydrates is the way of true health and permanent weight loss. As many people become accustomed to the SAD, not much thought may go into how that abundant display of meat, chicken, and fish ended up in the supermarket. What may not be realized is that in 2008, “the total number of animals killed on land and sea was approximately 80 billion, or 270 per American …” As population grows, obviously this number increases. According to this book, animals are pumped with hormones for faster growth and are crammed in unsanitary living quarters, for the sake of the high demand for meat. Legal or not, this is unethical. The last section of the book has 125 great recipes that are full of flavor and variety. You will be surprised at the different types of meals you can still eat by making some substitutions – even your children will love them! For more enticing meal options and recipes, check outForks Over Knives The Cookbook, now on the New York Times Best Seller list. It is a great companion to this book to further entice your plant-based eating diet. Absolutely check out the ForksOver Knives documentary, which preceded the actual book. It’s in the same genre and style as Supersize Me – maybe not as funny, but definitely interesting and more inspiring. The basic premise of the movie is about the 500,000 heart bypass surgeries happening every year in the United States alone. At a cost of $150,000 per surgery, it costs the United States 75 billion dollars in one year, and it doesn’t even resolve the problem as patients return for more heart bypass surgeries that eventually end in the death. The definition of insanity is doing the same thing and expecting different results. This means the United States is insane for relying on surgery, rather than promptly prescribing people to eat a plant-based diet. I highly recommend this book for anyone wanting to become healthier and never have to “diet” again, while at the same time promoting a safe environment. This book is so great that I have given out over 30 copies of this book and the DVD to friends, family members, and open-minded people. If you are tired of the failed diets, tired of all the medication you are taking, and tired of just being tired, READ THIS BOOK – your life depends on it! I purchased this for my Nook. A number of the recipes had a question mark in the place of the amounts for some items in the recipes..i.e. ? cup of peas instead of 1/3 cup of peas. This makes the book unusable for some of the recipes. I contacted B&N and they refunded my money and I went and bought the paperback. For this reason, I gave it three stars, but the paperback is great.

I like the book because it changed the way I now eat. Never thought about the abuse of animals before they all killed for food. God gave us dominion over the fish of the sea and the animals of the fields. Everyone should read this book before eating another piece of meat. Thanks to Dr. Caldwell Esselstyn. If you're disenchanted with the Western way of eating; too much fast food with fat, salt and sugar this is a great book to begin a transition. This book should be accompanied by a viewing of the documentary. We've been conditioned to believe if we eat a low-fat diet we'll loose weight and the health issues of diabetes, heart disease, high cholesterol etc will be corrected by taking a pill. Th evidence is overwhelming as we continue to eat meat, dairy and processed foods we will continue to be a nation of over-weight, cancer ridden and unmotivated people. The recipes look delicious and yes, you will need to become familiar with new ingredients. This should be required viewing for everyone including middle school children who will old enough to understand what they are watching. I'm beginning to transition to this eating program; think of it as a new way to live and not a diet.

this book is extremely brief and i personally find the recipes poorly assembled whose ingredients are not readily accessible nor palatable realistically. there are hundreds of vegan or vegetarian books with better cooking instructions and ingredients on the market. i was greatly disappointed in the book's recipes which take up the majority of the book. i would not recommend it for a friend or an unhealthy person looking to modify his diet with ease and efficiency.
