Grandma Knotts' Tapioca

4 c. milk
1/8 t. salt
4-½ T. pearled tapioca
3 eggs, separated
3/4 c. sugar, divided
1-½ t. vanilla extract
Combine milk, salt and tapioca in a saucepan. Cook over low heat, stirring often; bring to a boil. In a separate bowl, beat egg whites with ½ cup sugar until stiff peaks form; set aside. In a separate bowl, beat egg yolks with remaining sugar; add to boiling tapioca mixture. Bring to a boil, then remove from heat. Stir in egg white mixture; let stand 15 minutes and stir in vanilla. Serves 4 to 6.
