Michel Stroot, a chef you will get to know well in this book through his recipes and insights, is a man for all seasons-equally at home in the worlds of cooking, gardening, volunteerism, art (he is a wonderful sketcher and painter) and the knack of making friends. I've often seen him smile like a shy kid when, upon entering the Golden Door's dining room at dinner, the guests rise to applaud him. He is the spa's "not-so-secret" lure, and is certainly one of the reasons many guests return over and over. I am no longer taken aback when I meet someone who has been to the Golden Door and they ask, "Is Michel, the miracle worker, still there?" I happily reply "Yes!" and that, as any restaurant owner will tell you, is in itself a miracle.

Recipe sample:

Red Bell Pepper Soup with Fresh Basil

Makes 6 servings

Roma tomatoes and red peppers give this soup a wonderful color. Be careful not to over-process or it will lose its vibrant red hue. The rustic flavor of the peppers melds perfectly with fresh basil. Serve hot just as it is, or chilled with chunks of crabmeat, lobster, or avocado. Hot or cold, this soup makes a great start to any meal.

2 teaspoons olive oil

1/2 medium onion, minced

2 cloves garlic, minced

4 large red bell peppers, seeded and diced

5 plum tomatoes, quartered, seeded and diced

1 pinch saffron

3 cups Chicken Stock (page 00) or Vegetable Broth (page 00)

1 bay leaf

1 teaspoon salt, optional

2 tablespoons very thinly sliced fresh basil leaves

Heat the olive oil in a small pot set over medium heat. Add the onion, garlic and red bell pepper; sauté, stirring, for 4 to 5 minutes, or until the vegetables begin to soften. Add the tomatoes; cover and simmer for about 2 to 3 minutes, or until they are soft. Stir in the saffron, stock or broth, bay leaf, and salt (if using); simmer, partially covered, for 30 minutes. Remove from the heat and let cool. Remove the bay leaf and discard.

Transfer the soup to a blender or food processor fitted with a metal blade; process until just smooth. Be careful not to over-process, or the soup will discolor and turn orange. Strain the soup through a fine-mesh sieve back into the soup pot; heat through.

Ladle into warm soup bowls and garnish with basil; serve.
