ea. vol: Aris Bks. (Kitchen Edition Bk.). illus. cookery The first two volumes in a new series. Fletcher, a California cookbook author with experience at Chez Panisse, explores eight favorite grains. While she acknowledges the health benefits of these foods, her emphasis is on flavor and good taste. Her well-written, informative recipe presentations and a range of dishes from Duck Risotto to Rice Pudding Brulee make this a good choice for subject collections. Lucas and Wilson, chefs at an Italian restaurant, present a selection of antipasto dishes both traditional and nontraditionalDuck Breast Prosciutto, Prawns in Grappa, Pasta Fries. As these recipes can easily be combined to make up a satisfying meal, the authors also include sections on Dolci (sweets) and aperitifs. Still, while the ideas are fine, most collections already have more substantial Italian cookbooks on hand. An optional purchase. JS
