Denis Kelly, an Oakland, California resident, is the co-author of the best-selling, authoritative guide on meat, The Complete Meat Cookbook, as well as two award-winning cookbooks, Hot Links & Country Flavors and Tom Douglas's Seattle Cooking. His most recent books include Pacific Grilling and Grilling. In addition, Kelly has contributed articles on wine and food to Gourmet, Vintage, Wine Country, and Wines & Spirits. He has lectured extensively on food and wine. Maren Caruso is a San Francisco-based photographer specializing in food and travel photography. Her work has appeared in Gourmet, Sunset, San Francisco, Food Arts, and Saveur. She photographed Martin Yan's Asian Favorites, The New Complete Coffee Book, and several books for the Cook's Collection series.
