Editorial Reviews

Library Journal
Grillers, prepare yourselves because Browne, host of PBS's Barbecue America, is going to rock your world! Browne grills not only the traditional steak and potatoes but also vegetables, fruits, desserts, and breads. For novice grillers, he covers which grill to use, gear and gadgets, thermometers, pans and dishes, rubs, marinades, brining, and sauce. Recipes, arranged by season, include the grill temperature, whether a pan is needed, and substitutions (rum flavoring in the Rum and Coke Cake). There's plenty for the health conscious, including Crisp Veggie Patties (made from lentils, carrots, onions, celery, beets, and spices). Highly recommended. Another excellent title is Steven Raichlen's How To Grill.
