He then evalutes the impact of these transformations on health nutrition through the ages, comparing three types of evidence: recent findings of epidemiology about the causes of various illnesses, patterns of health and nutrition in modern hunting and gathering bands, and data obtained by studying the health and nutrition of skeletons uncovered in archaeological sites representing different periods of prehistory and different stages in the emergence of civilization.
