Editorial Reviews

Library Journal
This more restrained follow-up to Pillsbury's The Complete Book of Baking (LJ 10/15/93) offers lower-fat, lower-cholesterol, lower-calorie recipes for both sweet and savory baked goods. A few sound too much like diet food (pumpkin pie made with evaporated skimmed milk and egg whites), but overall the editors' approach is not the fanactical one of some low-fat dessert books. Most collections will want to add Pillsbury's latest.
From Barnes & Noble
Most people want to eat a healthful and nutritious diet, but don't want to sacrifice taste. Fortunately, the world of baked goods is made up of a wide variety of delicious choices. Adopting a more reasonable attitude toward eating, which allows incorporating even so-called "forbidden favorites," such as chocolate chip cookies or fudgy brownies, does away with deprivation and promotes a long-lasting approach to good health.

Healthy Baking, filled with more than 200 exciting recipes, healthful notes and nutritional information, takes many indulgent favorites, like cakes and pies, and trims the fat without sacrificing flavor. Simple, easy-to-follow recipes on cookies and bars, quick breads and muffins, yeast breads, cakes, pies and tarts and an assortment of other delicious desserts will be sure to please family and guests alike.
