Heart disease is the largest single cause of premature death in the Western world, yet can often be prevented by good eating habits: reducing the amount of saturated fat and salt, and increasing plant foods, in the diet. Paul Gayler is the Executive Chef at The Lanesborough Hotel in London. He has worked in some of London's most prestigious restaurants, including The Dorchester as Anton Mosimann's deputy, and as Head Chef at the renowned Inigo Jones, where he pioneered "Vegetarian Haute Cuisine" with his Menu Potager, a seven-course gourmet vegetarian meal.

The author of several recipe books, Paul has won The Guild of Food Writers Cookery Book of the Year and has also been nominated for an André Simon Award. Paul Gayler has also made guest appearances on television, including BBC2's Saturday Kitchen.

Jacqui Lynas B.Sc. R.D. is a leading dietitian specializing in heart disease, and a cardiology dietitian at the Conquest Hospital, East Sussex, England. She is a nutritionist consultant for H.E.A.R.T UK and editor of their bi-monthly magazine, The Digest. Jacqui also lectures both nationally and internationally and is the author of many publications and books for both the healthcare profession and popular press.
