This entertaining book, written by a mother/son team, is for anyone who knows food is produced in the kitchen but finds the details of the process to be shrouded in mystery. For foolproof recipes that require the bare minimum of time, equipment, and expertise, Help! My Apartment Has a Kitchen is a great place to start.

When Kevin Mills moved into his first apartment, he soon realized he couldn't live on just take-out food alone, so he called his mother, Nancy. She taught him to cook, and now the two of them have put together a collection of easy recipes (actually, they're graded-most are Very Easy or Easy, a few are Not So Easy) for inexperienced cooks, along with lots of "Mom tips" and "Mom warnings." (Because Kevin's girlfriend is a vegetarian, more than half the recipes are vegetarian.) Less ambitious than either Elaine Corn's Now You're Cooking (LJ 10/15/94) or Lora Brody's The Kitchen Survival Guide (LJ 5/15/92), and with a more scattershot approach, this should nonetheless appeal to recent graduates and others cooking for themselves for the first time.

Really Sloppy Joes

Serves 4

1 pound lean ground beef (see Mom Tip 1)
1 medium onion
2/3 cup ketchup
1/4 cup water
1 tablespoon vinegar (any kind)
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
6 drops hot pepper sauce
4 hamburger buns, toasted (see Mom Tip 2)

Brown the beef in a large frying pan over medium-high heat for
about 10 minutes, stirring frequently at first to break the meat
into small clumps. If the beef seems like it's starting to burn,
turn the heat down to medium. It's not necessary to add oil
since even the leanest beef has fat in it. Carefully drain the
fat into an empty can and discard.

While the beef is browning, peel the onion and chop into
1/4-inch pieces. After the fat has been drained off, add the
onion to the beef. Cook for 2 minutes, stirring frequently. Add
the ketchup, water, vinegar, Worcestershire sauce, mustard,
garlic powder, hot pepper sauce and cook, uncovered, over
medium-low heat, stirring occasionally, for 10 minutes. Add up
to 1/4 cup more water if the mixture seems too dry. It should be
thick and juicy rather than watery.

Spoon one-quarter of the mixture into each bun half, top with
the other half and serve like a burger. Or, if you don't want to
get your hands sloppy, open the buns flat and spoon one-eighth
of the mixture on each bunhalf and eat with a fork. Repeat with
remaining buns.

Mom Tip 1: The amount of fat in ground beef varies from less
than 7 percent to at least 30 percent. The leaner the beef, the
higher the price, but the less fat you'll be draining off.

Mom Tip 2: If you toast the hamburger buns while the Sloppy Joe
mixture is cooking, they won't get soggy so fast.

    A Great Gift!

    This book, along with Help! My Apartment Has a Dining Room, makes a great gift set for college students, for a housewarming gift, or for anyone who likes to cook. The recipes are easy and delicious, and the "mom tips" throughout are genuinely helpful. The authors' dessert book, Chocolate on the Brain, also makes a great gift for chocolate lovers. Again, the recipes are easy and delicious, and the book offers the same witty text and tips.

    This book is excellent! Not only does it have easy to follow instructions, the recipes actually taste GREAT! This cookbook has helped me survive my college years without starving! I highly recommend it, especially to beginners in the kitchen! You won't be disappointed!
