English (Canning & Preserving with Ashley English) has DIY street cred, and this entry in her series of back-to-basics books covers dairy—from how to make your own butter through making complex cheeses and ice cream. Like the other series titles, this one is filled with easy-to-understand instructions and copious photographs and illustrations. Some of the many sidebars can be distracting, but overall the organization and presentation is clean and easy to follow. English covers equipment and techniques thoroughly and includes a glossary to less familiar terms. The chapter on the different types of butters is a simple entry point for budding foodies and includes instructions on making compound butters and ghee. Yogurt, kefir, and crème fraîche round out the first half of the book and, aside from a few pages of body-care recipes and out-of-place items like kefir cornbread, the rest is all about cheese-making, from a simple ricotta to a Parmesan aged for ten months.Verdict Foodies and the DIY community will love this book.—Ann Wilberton, Middletown Twp. Somewhat dry but easy-to-follow guide to the mysterious world of homemade dairy products.

The latest addition to English's Homemade Living series (Keeping Bees with Ashley English, 2011, etc.) joins the ranks of countless new titles that invite readers to forego the suburban supermarkets for their kitchens instead. After a brief overview of the deliciously active role of dairy throughout human history, the author jumps right in to the tools of the trade. Readers unfamiliar with mesophilic cultures and curd knives need not fear; the English's spirited, encouraging tone will soon have readers believing that they, too, can produce the cheddar they so eagerly reach for in the refrigerated aisle. "I love the self sufficiency and empowerment I feel when I take a humble gallon of milk and create something entirely different. It's...part science, and part magic," home cheesemaker Claudia tells the author in one of the many sidebars that appear in the manual. These inserts, often biographies of other members of the DIY dairy revolution, could have upped the entertainment value of the book had they been peppered with clever anecdotes and quips on the challenges of making your own cheese. But English is no slouch at demystifying the intricacies of home dairy; from the simplicities of churning out your own delectable butter to pressing your very first gouda, the author covers it all in clean, unpretentious, step-by-step instruction.

Excellent for those looking to take a slight step off the grid.

    EggsXcellent!!

    I really wanted to raise chickens, but found the whole idea completely overwhelming - any book I picked up made it sound like rocket science, with a million things to remember and small catastrophes lurking around every corner. Ashley's book smoothed my ruffled feathers, sat me down and gently explained it all. It was so much simpler than I'd feared. I was able to figure out right away what kind of birds best suit my environment and my needs, what kind of housing they need and how to care for them. Turns out it's simple enough that an 8yr old can follow along (and she did!). The layout of the book makes it a super friendly read and the photography will make you want to run out and start right away! Good news is that this book gives you the know-how to actually be able to do that. Of all the chicken books out there, this is the one that will get you up and running with no fear (and lots of fun - just ask my 8 yr old!). Highly recommend.

    Everything you need to know about dairy!

    Like the other books in the Homemade Living series, Home Dairy is beautiful and incredibly informative, aiming to bring yet another aspect of a homemade life within easy reach of the average aspiring homesteader. Ashley English covers history, techniques and equipment, and shares over 40 recipes for making all kinds of dairy goodness like cheese, butter, yogurt, ice cream and body care products.

    The photos and design are a feast for the eyes, and the instructions and recipes are as straightforward as can be. Browsing through Home Dairy for the 3rd or 4th time, I was seized with that same uncontrollable hunger I've felt every time I've flipped this book's pages. I decided to make butter. It was easy, fast and delicious!! I can't wait to try some of her other recipes. I think it may be time to dust off the ice cream maker!

    Last Christmas, I got my husband two essential books on cheese-making and I should have just waited for this book to come out instead. It covers all the basics and then some to tackle your dairy-making ambitions including a variety of both simple and impressive cheeses. There are even plans for a DIY cheese press! Home Dairy is a great addition to our cookbook and homesteading library. I am antsy to see what's next in the Homemade Living series!

    Thanks to Martha Stewart, I thought owning chickens would be glamourous. Thank goodness I read Ashley English's Keeping Chickens. This book keeps it real. I found the information included in this book to be incredibly resourceful, informative and actually a delight to read. I found myself on several occasions spouting off facts to my husband in amazement (Did you know that cannibalism is common among chickens??). I also loved that in the midst of all the instruction & supply list are these great human interest stories: Portraits of a Chicken Owner.

    This book covers all details of keeping chickens under these main subject chapters: What to Consider, Selecting a Breed, Obtaining Chickens, Housing, Feeding, Hatching Eggs, Raising Chicks, Health & Wellness, Eggs and Recipes.

    I honestly can not say enough about this book and how well written it is. If you are considering chickens then you must read this book!

    Everything you could want to know about raising chickens & eggs

    A must have book if you are even considering keeping Chickens. Ashley takes you step by step through the entire process from picking the breed to housing, feeding, cleaning, and collecting eggs.

    The delicious recipes at the end of the book are an added bonus. My children especially loved "A Good Way To Dye" The how to on natural dyed eggs, using common found kitchen ingredients. The perfect Boiled Egg gave us the secret to not having those green rings around our hard-boiled eggs.

    This a beautiful book even if you don't end up keeping chickens there is much to learn as a consumer of eggs & chicken products.

    Great Book for Anyone Who Wants to Get Chickens

    I bought this book because we have 12 peeping little chicks under a warming light in our basement. And I wanted to be able to take care of them properly.

    This book was VERY helpful. She explains everything you need to know in terms everyone can understand. I am much more informed and the book was not a boring technical thing - it was interesting and fun to read.

    Beautiful book!

    Ashley English has triumphed in her attempt to make raising chickens and home canning seem doable for the average Joe. The recipes are wonderful (and I've tried a few)and are easy to follow. You feel like you are in Ashley's kitchen and she's helping you along.
