Hot Chick’n Salad

This scoopable chicken salad was inspired by classic Buffalo wings. Its got the heat, the ranch, and even the celery and carrots. What it doesn’t have is all the fat and calories. Yay!

PER SERVING (half of recipe, 3/4 cup):

142 calories, 2.25g fat, 600mg sodium,

6g carbs, 0.5g fiber, 2g sugars, 25g protein

Ingredients:

-6 ounces cooked lean skinless boneless chicken breast, cubed

-3 tablespoons fat-fee mayonnaise

-3 tablespoons chopped celery

-3 tablespoons chopped carrots

-2 teaspoons reduced-fat parmesan-style grated topping

-11/2 teaspoons Frank’s RedHot Original Cayenne Pepper Sauce

-1/2 teaspoon dry ranch dip/dressing seasoning mix

Directions:

-In a small bowl, combine the mayo, Frank’s, and ranch mix. Stir well, and set aside.

-In a medium bowl, mix chicken, celery, and carrots. Add the saucy mayo, and stir. Sprinkle with parm topping, and stir again.

    A little disappointed

    I bought this as a gift for my daughter. She liked the idea but it called for too many "specialty" items. You could always substitute but then it is no longer under 200 calories recipe.

    Not only entertaining, but delicious!

    I've been a loyal follower of the Hungry Girl daily e-mails for quite some time. I've used Lisa's first cookbook faithfully this past year as I've been on Weight Watchers. This new cookbook will be a welcome addition to my cookbook library. The recipes are easy, align readily with WW and are delicious. Not only are the recipes great, but the quirky humor brings a smile to my face and helps make the weight loss journey that much more fun!

    disappointed...

    After reading through every page of this book, I have to say I am thoroughly disappointed. I think it's great that there are so many recipes that are low in calories, but it seems like it doesn't focus on being HEALTHY - the majority of the ingredients are processed foods/products, like the no-calorie sweeteners are used alot, and the low/no fat cool whip is also used quite a bit. Anybody that has done a little research knows that focusing on low-fat and low-calorie processed products is not the healthier way to go. We should be focusing more on the UNprocessed foods in order to really work on a healthier way of life.

    Hungry Girl Satisfies Over 200 Times

    My brother suggested I check out the Hungry Girl website
    because he had been using the daily recipes, himself. I purchased the first book right away (recommended below), and got the 200 book as soon as it came out. Hungry Girl 200 under 200 is an in-hand version of the daily newsletter (not necessarily a replica, mind you, but I don't have to print out nearly as much as I had been...OK, I'm older, and I like to hold things in my hands).

    The recipes are easy to follow, and they taste good...very good. My husband enjoys them, too, and I am learning to adapt my other personal file recipes. A straight forward format and consistent layout make for easy use without getting lost, and all meal categories are covered. Some of the ingredients are not to my liking (a recommended noodle, for one...like chewing rubber no matter what you do with them...except for deep-frying, which rather defeats the purpose of the book, I think.) Substitution is easy, so there is no problem.

    This is a no-pretense presentation by an author who is easy to like, full of suggestions, and showing evidence of a healthy sense of humor.
    College kids and singles would like this cookbook...most recipes are for one serving (easy to double for partners), and they are not measley, stingy servings, either.

    200 under 200 is the type of eating plan book that makes a good gift for anyone who cares nutrition...no recriminations, and lots of sodium, carbs, fiber, protein, etc. info to boot.

    What can I eat that is quick, fun and under 200 calories!?

    If you are looking for a breakfast, lunch, dinner cookbook,this is NOT the one for you. But if like many busy, on the go people in today's world you are looking for a grab and run meal several times a day this is the book you've been waiting for! I like little meals that I can eat on the fly and this book is full of them.

    There are 14 chapter in this book ranging from morning meals to CUPCAKES! Hungry Girl includes smoothies and dips, meal starters and deli style salads. Her emphasis is on low-fat, low-calorie, high fiber meals. All the nutritional information is given at he beginning of each recipe: calories, fat, sodium, carbs, fiber, sugars and protein. With that information you are able to make wise choices for yourself.

    I have 2 favorite recipes from the ones I have tried:
    Crazy Calypso Salad, includes spinach, shrimp, mango and avocado in a dressing of seasoned rice vinegar, lime juice, sweetener (I use real sugar) and cayenne pepper. All of those produce items are available now, and this salad is terrific.
    14-Carat Cupcakes: these are a carrot cake style of cupcake, with a frosting made from fat-free cream cheese, Greek style yogurt, sweetener or sugar and vanilla. Delicious.

    If you're a grazer, or if you know someone who is; OR if you are watching your weight and want to switch from a 3 meal a day schedule to a schedule of several small meals this is a great book to have in your repertoire.

    OK but...

    Being on Weight Watchers I'm always looking for recipes low in calories, low in fat, high in fiber but with healthy choices. This book is good if you are willing to change up some of the ingredients. I don't use Cool Whip not even the Fat Free one because of the hydrogenated oils the manufacturer uses. Fat Free Cool Whip is used in numerous recipes in this book and I substituted low-fat whipped cream for the FF Cool Whip. Did you ever try to melt Cool Whip? I ran hot water over it and it doesn't melt! This author also uses Splenda in all recipes as a calorie free sugar substitute but it doesn't work for me. When I was a regular user of Splenda it caused major problems for me with stomach gas, when I stopped using it so stopped the gas. Other healthier choices are Stevia (0 calories), Sun Crystals (4 calories per packet) or whatever works for you. It was a little disappointing that the author used so many artificial products in her recipes to achieve the "under 200 calorie" status.

    I did like the choices for low fat substitutions and baking versus frying, yes...I found this to be a good feature. So if you don't mind doing a little research on your own and reworking some of the recipes to suit your healthy choices as I did, the book might be helpful to you.

    Am I sorry I bought it. No. Would I buy it again? No.

    Go to the library first and check out it for yourself. If it works for you, buy it. If not, there are plenty of books with healthier choices for low calorie cooking...

    No Mixed Feelings Here - A Great Resource for Your Kitchen!

    First, let me say as a personal trainer, I tend to read as many fitness or diet books as possible. I also include dieting cookbooks as well. If I can find good recipes that give my clients healthy options, then better for them, and better for my business. Lisa Lillien and "Hungry Girl 200 under 200" DOES give the reader options. Is every recipe a great one? I don't know, my wife and I haven't gotten through them all. We have however, found quite a few that we have used in our home, and recommended to our personal training clients. I have purchased the book, with 1 copy staying in our kitchen library, and the other staying in our personal training studio, for clients to utilize...and they do! So, if you want a practical resource to help you make the choices that are good for you, then pick this up.

    Also, remember---it is your choice. NO book will make you eat less or trim down. A great book to empower and motivate you that I give to each and every new client I have is: BUILD YOUR MIND, YOUR BODY WILL FOLLOW. A great addition to your permanent library!

    Love it!!

    Finally, recipes that are truly guilt free! Recipes that are delicious enough that my husband will eat them and many fit easily into my grocery budget. My favorite chapter is the cupcake chapter-guilt free cupcakes!! Its nice to have food to share with my friends, who are also watching their figures. Most recipes are quick to make as well. I don't have room for extra calories in my diet or extra time to prepare things that are complicated. These are recipes for real women in the real world.

    If my house were on fire, I would grab this cookbook before I ran out.

    Quick and easy to prepare foods that really are guilt free. I bought the cookbook two weeks ago and use it for lunch, dinner and snack recipes. I've lost 10 pounds. I am going to buy all the other cookbooks too.

    Great snack recipes

    I bought this book because I had already purchased Hungry Girl 1-2-3. This one is nice because it does have more fun snack items in it. I love the chocolate cupcakes and even served them to kids who really approved of them. I also like that there are weight watcher points with things. Before when I did weight watchers I had a hard time this book and her other books have made that so much easier this time around. I have actually lost 10 lbs. eating these recipes and my boyfriend has lost 20 lbs. I would highly recommend this book to anyone. In fact I tell all my friends about them.

    Hungry Girl not what I expected

    I saw the author on a TV show and her ideas were innovative, so I ordered the book. Some of the recipes for entrees are great. Don't care for the desserts made with pumpkin as a fat substitute. I tried to substitute a lesser amount of unsweetend applesauce for the pumpkin in the fudge recipe. It tasted much better. I wish she would give instructions how to make a low cal, low fat cake. She has lots of cupcake recipes which only call for 1/2 box of cake mix. I'd rather make a whole cake when I'm having guests, but am not sure how to adjust the baking times for a large pan, and also whether the results would be satisfactory.

    HIGHLY recommend....just love this....a must have

    A good friend of mine bought me this book...and I love it!! its easy to follow recipes are yummy; and has helped me curve my sweet tooth without losing my fight with trying to live and eat healthier,
    One of my fav's is the I can't beleive its not potato salad, its a little tart but gooood. I've only had the book for one week and already made over 7 different things and have not been disappointed with any of them.

    More Good Recipes

    Hungry Girl Lisa Lillien did it again with this collection of low calorie, low-fat recipes. Her recipes use the most unusual ingredients and always come out tasting great. The "natural food" purists will probably not like this one because Hungry Girl does use artificial sweeteners and other substitutes for high calorie ingredients; but when you look at the recipes overall, they are healthy with lots of fiber, fruit, vegetables, and lean proteins. The amazing thing is how good they taste. The recipes are in general for one serving, making it easy if you are the only person in the house interested in "eating light".

    Get this book!

    I love this book! The recipe's aren't hard to make at all and the food comes out delicious! The products are listed by brand name so it's easy to shop for when you're out buying stuff to make a recipe. It sometimes even gives you an alternative just in case your store doesn't carry that particular brand.

    Good Cookbook

    I have made a few of the recipes in the book so far and I really enjoy them. I'm a bit of a picky eater so I sometimes substitute the ingredients, but it's a good basis to start with. Definitely a good book for those looking for healthier alternatives.

    A great cookbook.

    This is a lo cal cookbook, but it is also filled with delicious recipes. Each of them seems to be delicious and easy to make, which means you don't have to go to the store and find a zillion ingredients. Overall, if you are looking to stay out of the restaurants and eat at home more, but still lose some weight, this one is a good bet.

    Just Okay

    Lots of good recipes, but for things I wouldn't normally make or keep in the house (i.e., cupcakes). If you're a junk food junkie, then lots of healthier versions.
