Fish & Shellfish-Tuna Fish Cakes

Around 10oz. Potatoes, boiled
2 tablespoons butter
two 6-oz. Cans tuna, drained and flaked
2 tablespoons chopped parsley
2 eggs, beaten
3/4 cup dry breadcrumbsoil, for frying
salt and pepper
parsley sprigs, to garnish
lemon wedges, to serve

1. Mash the potatoes with the butter, then mix in the tuna, parsley, half the beaten egg, and salt and pepper to taste.

2. Chill the mixture for 20 minutes, then place on a floured surface, and shape into a roll. Cut into 8 slices and shape each into a flat patty, about 2 1/2 inches in diameter. Dip them into the remaining egg, then coat with breadcrumbs.

3. Heat the oil in a frying pan, add the fishcakes in batches, and fry for 2-3 minutes on each side, or until golden brown and heated through. Garnish each fish cake with a parsley sprig. Serve with lemon wedges.

Serves 4
Preparation time: 15 minutes plus chilling
Cooking time: about 20 minutes
