La maladie coeliaque est une affection digestive où la consommation de gluten endommage la paroi interne du petit intestin limitant ainsi sa capacité d’absorption. Une intolérance au gluten présent dans le blé, l’avoine, le seigle, l’orge, le triticale, l’épeautre et le kamut limite l’absorption des éléments nutritifs essentiels à l’organisme, rendant celui-ci vulnérable à la maladie. En effet, les études ont démontré que le gluten est un facteur contribuant au développement de certaines maladies dont le côlon irritable, l’arthrite, la fibromyalgie, la dépression, la sclérose en plaques, l’autisme, l’endométriose, l’infertilité, l’ostéoporose et bien d’autres.
