    Mandatory for Cooking Schools

    This book is extremely readable for a textbook. I read it to my wife outloud as she is blind. She understood every chapter. It should be mandatory reading for all cooking schools.

    Easy reading, mostly "common sense."

    I'm only through the first three chapters but know I will finish it soon. Very easy reading and common sense about a topic everyone knows in their heart but nobody thinks much about. I will be very suspicious every time I eat out. I never trusted the government to protect me anyway.

    Really Important Stuff

    Very readable. Points out basic flaws in our restaurant safety system. Reading this book can probably prevent your getting sick in an American restaurant. Good pointers for cooking and food preparation at home--from a Public Health Professi
