Meet the Author

Val Burke has been writing for most of her life. Her background as a psychiatric nurse, lover of natural health, and self-proclaimed "science nerd" makes her well suited to writing books about health and nutrition.

When Val comes up for air, she can be found doing yoga, cooking, reading, or watching anything sci-fi with a nice glass of merlot and two elderly (but adorable) cats vying for lap space.     Little did I know during all my 80 years on this earth I was naturally drawn to a "Paleo-type diet" from childhood.

    My mother used to tell me I wanted a pickle when my playmates wanted candy or some other sweets. I've never craved sweets of any kind, and
    sugary foods/drinks send me into a physical dive. It takes hours to recover. I'm not diabetic..... that's been medically proven. My primary food
    likes are in meats and vegetables. Apples are my favorite fruit.... no others attract me, but I do have small portions occasionally. I drink gallons
    of iced tea and water, so much that my sodium level is always on the low side of normal. I try to remember to add a bit of sea salt to food that
    needs it, but I don't crave salt.

    My excellent health, with no disabilities and no serious health issues, may be be gene-related, or it may be because of my innocent choice of
    proper diet. I don't know. I live in a senior residence, and am the only resident who always takes the stairs. I walk 1-2 miles/day, and attend
    strength and balance sessions conducted by a personal trainer. I cannot guarantee my choice of foods is the reason for my excellent health,
    but it's difficult not to give it some credit. My brother died before he was 50, my sister has about every physical ailment possible to cram into one
    human,  and has always had health issues. Her diet was the opposite of mine.... lots of sugars, carbs, soft drinks, and always lots of coffee with
    2-3 teaspoons of sugar and artificial creamers. 

    I recommend this Paleo book because of its simplicity and clarity, and just plain good sense, backed with scientific facts all along
    the way. It would take an incredible amount of time to do the research ourselves and "digest"  all of it into the simple text the author has done.
