Sample Recipe: Breakfast Cocktail
Serves 1 or 2
A sweet blend of goodness even the pastel orange color lends a cheerful note. Save pulp for use in Curry Sauce (recipe in book). Peel, core and seed squash and apples if planning to use pulp later.
Quarter acorn or butternut squash, scrubbed and cut into chunks
2 medium apples, washed and cut into pieces
1 carrot, scrubbed
1 1-inch (2.5 cm) piece ginger root
1/4 cup (50 mL) natural yogurt
1. Using a juicer, process squash, apples, carrot and ginger. Whisk in yogurt. Pour into a carafe or large glasses.
