Can you boil water? If the answer's yes, cookbook author Lauren Chattman says you can put together a tasty, healthy meal -- and she doesn't mean just three-minute eggs or spaghetti. In Just Add Water, she offers 140 recipes that start with the simple step of putting a pot of water on to boil and go from there to great, uncomplicated meals.

Chattman's catchy title doesn't really give a hint of what's inside her appealing new book. The recipes in her first cookbook, Cool Kitchen (Morrow, 1998), didn't require any cooking; a chance comment from a friend who hoped her next one would be on how to boil water led to this. Here the only cooking required is boiling--though Chattman's definition is loose enough to include steaming, poaching, and simmering. The recipes are fresh and simple--Cod Fillets in Fennel Broth, Chopped Spiced Zucchini and Olives--with a few classics in the mix, too. Chattman has an engaging style. Recommended for most collections.

    don't be fooled by title

    Of the fifty or more cookbooks I own, this is in my top two! I go for cookbooks that tell the 'why' behind the recipe. Ones that reduce a recipe to it's core key elements often find thier way onto my bookshelf. This is it. Fantastic simple food.
