Recipe

Lucky Noodle Bowl

2 cups water
3/4 cup veggies like mushrooms, peas and spinach, finely chopped or shredded
3/4 cup cooked chicken, chopped
3-oz. pkg. chicken-flavored ramen noodles
soy sauce (optional)

Pour water into a saucepan. Add the veggies and chicken. Bring to a bubbly boil over medium heat. Unwrap noodles and set aside the seasoning packet, for now. Carefully place the whole block of noodles in the boiling water. Cook for 3 minutes, until noodles are tender. Turn over noodles once or twice with the spoon so they'll cook evenly. Turn down the heat a little if it's boiling too hard. Take pan off heat. Open the seasoning packet and sprinkle the seasoning over the noodles. Stir to mix all the ingredients. Ladle into 2 soup bowls. Add a little soy sauce, if you like, and share with a friend. Serves 2.
