Ever since the 1975 "Cooks' Catalogue", there's been a gap in covering and assessing the new and novel kitchen items added continuously to housewares departments. With the very capable consulting aid of Irena Chalmers, Ettlinger ("The Complete Illustrated Guide to Everything Sold in Hardware Stores") attempts to inform anyone with even the vaguest interest in food about the universe of implements. His act of organizing items into four categories--preparation, cooking, beverage and serving, and kitchen accessories--deserves applause; each annotation includes, if appropriate, a description, other names, use, and use and buying tips. Overall recommendations and explanations make sense; for example, the "never needs sharpening" type of knife simply becomes dull after a while and cannot be honed--ergo, buy the best. Unfortunately, the scholarship and suggestions provided by the 1975 team of Beard, Glaser, and Wolf are sorely missed.
