This colorful, informative book has food as its focus, but is simultaneously a great introduction to the country and the culture of Lebanon. The subject of food itself is preceded by chapters about the geography, climate, farming techniques, and history of food traditions in the region reaching back to the seventh century. A discussion of culture focuses on the traditions of hospitality including welcoming guests with rice cakes, always eating with the right hand, and the contrast between the common practice of sitting on the ground to share a family meal in the country and the modern restaurant table meals available in the city. There are also pages devoted to describing ways in which the influences of Islam and Christianity are reflected in food and eating habits. The author notes commonalities such as the ma'mal cakes eaten at both Muslim and Christian celebrations as well as traditions unique to each religion. Regional specialties are described and three simple recipes for classic foods are included—though not so simple that a child can follow them without a little adult help. Because regions were so isolated until the 1960s, small geographic areas developed their own specialties while in cities the common foods of cafes and street vendors formed new traditional fare. Of course, global influences have made their way into the Lebanese foodscape and Lebanese food has made its way around the world as well. The table of contents, index, glossary, and a bibliography of books and websites all add additional value to the well organized writing and outstanding photos that fill the pages of this engaging book.
