Readers who overlook some of Cooper's Low-Fat Living Program polemics (turning off the body's fat-making switches and turning on fat-burning ones) and her contentions that an anxious, angry or hostile individual metabolizes fats more slowly than others will be rewarded by these low-fat offerings. The easy-to-make, slimmed-down recipes for comforting favorites are based on widely recognized fat-reducing techniques and are particularly well suited to home cooks fairly new to the kitchen. Cooper offers Spaghetti Squash Casserole with low-fat cheeses, corn and tomatoes; Potato Pancakes (sauted in a non-stick pan with a minimum of oil) and Penne with Sausage and Broccoli made with poultry sausage. Interesting variations on those low-fat staples, vegetables, are found in such dishes as Green Beans with Feta and Walnuts, and Orange-Ginger Beets. Unusual low-fat combinations include Pizza with Apples, Walnuts, and Gorgonzola Cheese, or Cashew-Crusted Shrimp with Mango Sauce. Double Chocolate Chip Cookies are made with egg substitute and prune pure; prunes sweeten Low-Fat Chewy Brownies, which use egg whites rather than whole eggs. Adolescents aren't going to be as interested in low-fat recipes as their parents, but surely home economics departments in secondary schools want to stress various types of dietary plans: low-salt, low-fat, and so forth, if only for the students interested in pursuing careers in nutrition. This is a fine collection of low-fat cooking possibilities. Also, there are suggestions for cutting down fat content in favorite recipes with substitutions, ideas for using and storing condiments, and general instructions about kitchen safety and useful tools. Many of the recipes are vegetarian, which will appeal to that ever-growing group, and there are plenty of popular possibilities in pizzas, calzones, puddings, tacos, and the like. There are few illustrations, and they are line drawings, so the bulk of this book are the recipes themselves, clearly explained, with a lot of information about healthy, low-fat eating.     Where has this been my whole life?

    This is a fabulous starter cookbook for the person who is not yet ready to go totally fat-free in cooking. The recipes are clearly written and easy to follow - no exotic ingredients. Smart, good, tasty family fare. Lose weight? You bet! This book should be in every kitchen.
