Spinach, Chick-pea, and Olive Pasta

This one-dish meal is an eye-pleasing and satisfying combination of texture and flavor. It's also a great way to enjoy the many benefits of iron- and calcium-rich spinach.

Serves 4

Ingredients

4 ounces dried radiatore or rotini pasta

2 cups coarsely chopped fresh spinach (about 2 ounces)

15 ounce can no-salt-added chick-peas, rinsed if desired and drained

1 cup coarsely chopped bottled roasted red bell peppers, rinsed and drained (about 6 ½ ounces)

12 Kalamata olives, drained and chopped

2 tablespoons cider vinegar

1 tablespoon dried basil, crumbled

2 ounces Feta cheese, crumbled (about ½ cup)


To Prepare

Prepare the pasta using the package directions, omitting the salt and oil. Drain in a colander and run under cold water until completely cooled. Drain well.

Meanwhile, in a medium bowl, stir together the remaining ingredients except the feta. Add the pasta to the spinach mixture, tossing gently yet thoroughly to coat. Add the feta and toss gently.

    Low-Fat, Low-Cholesterol Cookbook

    I found the book helpful in redesigning my diet in an effort to lower my cholesterol. However, many of the recipes have alot of ingredients and aren't really "time-friendly". Some of the recipes are "keepers" and some are not real tasty.

    Good Grub

    I've used just a few of the recipes in this book thus far (three or four of the chicken dishes, a meatloaf, and some Brussels sprouts), but I've enjoyed them all. I'm pleasantly surprised at how flavorful they are. Photos would have been nice, but aren't really necessary. Cookbooks, though, should be bound so that they can lie open on the counter, and that's not the case with this one.

    Simply Delicious

    This book is a great guide for a beginner heart-healthy cook. The recipes are easy to follow and don't require you to be a master chef to be able to produce a healthy and delicious meal.
    The nutritional value of every recipe is printed at the bottom of the page, which is very helpful for the first-time fat/sodium counter.

    Excellent cookbook and informative.

    The cookbook is easy to read and the recipes are easy to prepare. There is a weath of information in this book and I found it well worth the money spent.
