Seafood Pasta with Lemon Herb Dressing
1 box macaroni and cheese
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup thinly sliced green onions
1 tablespoon drained capers
1 tablespoon minced fresh tarragon
1/2 tablespoon minced fresh dill
1 /2 teaspoon sugar
3 1/2 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1/2 cup finely chopped celery
1/2 pound Dungeness crabmeat
1/2 pound cooked medium shrimp
Boil macaroni in a large pot of salted water until al dente, stirring occasionally.
In a medium bowl, combine mayonnaise, sour cream, green onions, capers, tarragon, dill, cheese packet, sugar, lemon juice and oil; whisk to combine.
In a large bowl, combine cooked macaroni, celery, crabmeat and shrimp; toss with dressing. Chill at least 1 hour before serving.
MAKES 4–6 SERVINGS.
