Meet the Author

Guido Jans worked as a freelance confectioner for 36 years. As a teenager, he attended high school at the Sint-Janscollege in Genk, Belgium, before training as a confectioner at the Ceria/Coovi Culinary Institute, Brussels. He worked with renowned patissiers in Switzerland and France before moving to Paris to pursue his training at the famous École de Perfection Lenôtre.

Guido Jans won a number of awards, including a cross of merit and four gold medals at the EUROBA specialist championships. From 1990, he was chairman of the Eurobanketkring (a group of top Flemish bakers and confectioners). He was also chairman of the Federation of Bakers in Tienen, Belgium.Guido Jans died on March 16, 2007.

When preparing this book, he stated: “My profession remains my passion, now that it has become my pastime.”
