I really enjoy this book! I find that I often turn to this volume for a majority of favorite recipes. Especially in the summer/fall when I have an abundance of fresh produce on hand. Organized clearly, well written, with a ton of recipes! My favorites are the Winter Squash Risotto, the Tomato and Zucchini Risotto, and of course, Pasta e Fagioli. I have purchased this book for my mother and vegetarian sister, who also found it to be a great resource.
This is an excellent cookbook. It's the one I use over and over. Great, healthy food.
