Chipotle-Garbanzo Dip
makes 3/4 cup

1 (15.5-ounce) can garbanzo beans, rinsed and drained
2 garlic cloves, peeled
1 tablespoon fresh lemon juice
2 tablespoons adobo sauce (from canned chipotle chiles) plus more for serving
2 teaspoons sesame seed paste (tahini)
1/3 cup olive oil, plus more for serving
Salt and freshly ground black pepper
1 tablespoon chopped fresh cilantro
Tortilla chips

Put the garbanzo beans, garlic, lemon juice, adobo sauce, and sesame paste in a food processor and puree until nearly smooth; the mixture will still be a little coarse.

With the machine running, add the olive oil and process until well incorporated. Season to taste with salt and pepper.

Transfer the dip to medium bowl. Drizzle with olive oil and a few drops of adobo sauce and top with the cilantro. Serve with tortilla chips.

Very interesting book. I don't know much about Mexican cooking and this book really helps. I love her cooking show, and now I also love the book!! It's very well written and easy to understand. Marcela also gives you ideas for your leftovers, if you have a small family this is also very helpful. No crazy ingredients either. I could find everything on my local market.

Love the recipes on this book. They are easy and the ingredients are easy to find and if you are Mexican you probably have them in your pantry. My family loves the al pastor hamburgers and the chicken adobo. If you are always in a rush and need ideas for weeknights, this is the book.
