Whether it is the UFC or modern MMA, Mixed Martial Arts: An Interactive Guide to the World of Sports has you covered. Heck the 11-page index alone is worth the price of the book as a quick reference to a particular fighter's history.
The authors have several great Sports by Numbers books out that I can recommend such as Major League Baseball and New York Yankees: An Interactive Guide to the World of Sports.
