Purpose: This is a learning tool for health professionals who will be involved in providing nutritional counseling and support.
Audience: The book is intended for advanced students in the health professions with a strong background in biology but not necessarily much background in nutrition. It performs well by providing both general background and advance detail in each chapter and thus is valuable to both the novice and expert. The 116 chapters are written by experts in each of the specific fields. The chapters provide introductory material for the novice reader and sufficient detail in their summaries of current knowledge to serve as a reference for experts in nutrition.
Features: This book provides excellent coverage of required nutrients in the first third. It then builds on this material with sections on integrative biological systems, special nutrition needs during infancy, pregnancy and lactation, and aging. Roughly half of the book is devoted to the nutritional management of disease and nutritional support. The chapters are written in a common format and are generally uniform in the level and detail of information provided. While no chapters constitute definitive reviews for experts in the field, they are each very informative and well referenced. The text is supported by a large number of black-and-white illustrations, figures and tables, plus a small number of color pictures of the physical characteristics of nutrient deficiency diseases. There are nearly 200 pages of appendixes including dietary reference intakes, growth charts and adult weight percentiles, sample therapeutic diets, information on phytochemical contents of food, and additional information.
Assessment: This is an outstanding text on nutrition that covers nutrient requirements in health, the role of nutrition in the prevention of disease, and nutritional consideration in the management of disease. It is an outstanding learning and reference tool for health professionals. The tenth edition is fully updated and includes more material than the previous edition on population health and the role of nutrition in the prevention and treatment of chronic disease. This is the most comprehensive book on human nutrition and is ideally suited for postgraduate learning and also is useful for advanced undergraduate training.
