Using familiar objects (like food) to help explain unfamiliar chemical processes (like distillation and carrogeenan stabilizations) is educationally sound. And it works here to help young scientists make such "yummies" as cinnamon flavoring and chocolate pudding while they learn. The science procedures are entertainingly written, carefully detailed and briefly summarized with expected results. However, this book was originally published in 1979 and a lot has changed since then. We have different feelings about the use of MSG, the need for FDA approval, and the advisability of letting "raw" foods sit out of the refrigerator for long.
