Some say salsa is the basis of good Mexican-style cooking. Well, sure it is! We dip into it, top with it . . . we even cook with it! See—basics are important. You've gotta give this a shot.
2 cans (28 ounces each) whole tomatoes, chopped and drained1 large onion, finely chopped1/2 a medium-sized green bell pepper, finely chopped1/2 teaspoon minced garlic1 teaspoon lemon juice3 fresh jalapeno peppers, stems and seeds removed, finely chopped
Combine all the ingredients in a large bowl; mix well. Cover and chill for at least 1 hour to allow the flavors to "marry" before serving.
NOTE: You can make this as mild or hot as you want. For a hotter salsa, add 1 or 2 more chopped jalapeno peppers.
