Potato-Cheese Soup
4 to 6 servings

Nothing beats this popular restaurant favorite for the comforting tastes we all crave. And now we can have it at home anytime we want!

Ingredients

2 tablespoons butter
4 cups frozen cubed hash brown potatoes (half of a 2-pound package), thawed
1 medium-sized onion, finely chopped
1 tablespoon all-purpose flour
4 cups (1 quart) milk
1 container (3 ounces) real bacon bits
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups (8 ounces) shredded sharp Cheddar cheese

Instructions

In a soup pot, melt the butter over medium heat. Add the potatoes and onions and saute for 5 to 7 minutes, or until tender. Add the flour, stirring until the vegetables are well coated. Add the milk, bacon bits, salt, and pepper; mix well. Cook for 20 minutes, stirring occasionally. Stir in the cheese and cook for 5 to 7 minutes, or until the cheese has melted. Serve immediately.


Tangy Buttermilk Chicken
6 servings

Smooth, thick, and tangy, buttermilk makes this dish a taste sensation!

Ingredients

1 cup all-purpose flour
1/2 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon black pepper
2 cups buttermilk, divided
1/4 cup (1/2 stick) butter, melted
6 boneless, skinless chicken breast halves (1 1/2 to 2 pounds total)
1 can (10 3/4 ounces) condensed cream of chicken soup

Instructions

Preheat the oven to 425 F. In a shallow dish, combine the flour, garlic powder, salt, and pepper. Place 1/2 cup buttermilk in another shallow dish. Pour the melted butter over the bottomof a 9" x 13" baking dish. Dip the chicken in the buttermilk, then in the flour mixture, coating completely. Place in the baking dish and bake for 30 minutes. Turn the chicken and bake for 15 more minutes. In a medium-sized bowl, combine the soup and the remaining 1 1/2 cups buttermilk. Pour evenly over the chicken. Bake for 15 to 20 minutes, or until heated through and no pink remains in the chicken.

Note: Sprinkle with some thinly sliced scallions just before serving to make this dish really come alive.
