Muffins to Slim By: Fast Low-Carb, Gluten-Free Bread & Muffin Recipes to Mix and Microwave in a Mugby Em Elless
The Original Low Carb Minute Muffin Cookbook for weight loss, diabetic & sugar-free diets. Dozens and dozens of single-serving recipes bundled into a banquet of nutritious breads and muffins - as low as 0 net carbs! From Sweet (introducing luscious fruit substitutes) - to Savory to Meals in a Muffin, these innovative mix-in-a-mug recipes are quick to prepare and only moments away from fresh-baked and ready to enjoy.
Savory Stuffin' Muffins rich with sautéed onions and celery, buoyant sandwich and hot-dog buns, Parmesan Salsa or Italian Herb, Banana Nut Bread or Strawberry Shortcake, warm and welcoming Cinnamon Apple Upside-Down Cake, Ricotta Comfort dinner rolls, delectable Red Velvet with cream cheese, Maple Bacon for breakfast, Pizza or a Reuben Melt for lunch- for starters!
Those who are new to minute muffins prepared in a microwave may be disappointed that they aren't the same as "real" bread - those made with wheat/gluten flours and sugar, baked in an oven. They miss the texture that sugar and gluten add, and ask if they can substitute "real" flour and sugar -which of course defeats the whole purpose. I took the hard line and adhered strictly to low carb ingredients, and strived for such a wide variety of recipes that everyone should be able to find several that will become staples. If you don't mind a denser bread, you can reduce the baking powder from 1 tsp. to 1/2 tsp. Almond flour can be substituted for flaxseed. In other words, the recipes are versatile. Have fun with them! Each includes nutritional sidenotes and interesting health benefits of the ingredients.
If you haven't allowed yourself bread for a long time, have had to wrap your hamburger in a lettuce leaf or dearly miss breakfast toast, these recipes are a real blessing. It's bread! We're actually eating bread, and it's more than okay - it's really good for us! White flour tastes like paste to me now, compared with the flavor of ground almonds and coconut flour. It's a new way of eating. Preparing healthful recipes is one of the most satisfying, rewarding things we can do for ourselves.

This is a brilliant little book (primer + 52 recipes). First, the concept and the science is right-on, and the execution is flawless (alright, I found 1 typo!). The author is knowledgeable, both in baking and healthy low-carb nutrition. The book is targeted to the vast majority of people who don’t want to give up one of their favorite comfort foods but who are getting “sick” on the Standard American Diet and who also may want (need?) to lose weight. They’re standing on a sinking dock, but are afraid to jump in. With this book, you’ll discover the water is only waist deep and you feel great! As the sub-title says, you make “fast low-carb gluten-free muffins…” that you “…mix and microwave in a mug.” How simple is that! It does require some special ingredients, like almond flour, which you will have to get. It starts with a little prep, to be done in quantity to save time later: “Fruit Substitutes” and two “Baking Mixes;” then, the recipes: 22 sweet muffins, 20 savory muffins, and 10 muffin meals All are offered with a few nutrition facts and easy directions, with calorie counts, protein, total and net carbs. No fat counts. Okay, you have to accept that low-carb is going to be higher in fat, but that’s the way it works. Fat doesn’t make you fat; refined carbs, including processed white flour, sugar and hydrogenated vegetable oils do. This little book should be on every low-carb baker’s shelf. And all the muffins sound really delicious. Most of the net carb counts are in the 3 to 5 gram range – not like some so-called low-carb cookbooks. There are only 3 in the whole book above 6 grams, and one of those is the large double (2) chocolate muffin recipe (with 8.5). Whaddya expect! Besides, every recipe is a small meal with lots of protein (and fat) and all healthy ingredients. That’s a good WOE!
Have given this as a gift several times to friends who are on the low carb, low sugar diet. On that diet you need a treat from time to time and this book delivers all sorts of treats within the guidelines of the diet. All treats are easy to make and for one person so you don't have left overs to tempt cheating. Those who received Muffins To Slim By were thrilled as the many and varied recipes included with in the book allowed them to successfully stay on diet.
