Phytochemicals-bioactive plant substances considered to be beneficial for people-are the centerpiece of a diet being championed by the American Institute for Cancer Research. Its "New American Plate" is built around vegetables and whole grains, with an emphasis on brown rice, wheat pasta, and other healthful foods, rather than protein. In fact, a three-ounce portion of any protein is the recommended serving size, while most Americans have at least twice that much in one meal. Recipes are appealing and easy to make and cover every course of a meal. Well-known dishes are reworked, e.g., New England Clam Chowder, to help with the transition to healthier eating.     Great recipes for healthy eating!

    I found this book while I was training for my first marathon. I wanted something that would give me great fuel but not encourage me to "diet..." afterall you get out of your body what you put in. I began reading the text as it provides great insights to what a well balanced plate should look like and how to transition to maintaining a healthy plate. I found the recipes to provide the most delicious vegetable dishes I had ever tasted. Plus I found that I could prepare the vegetables ahead, freeze them, and then make them up when I was ready! They still came out tasty and with a family that is a huge plus. The more I made the vegetable dishes the more that I noticed unhealthy food falling off of my plate naturally because everything was so good. I highly recommend making the investment in this book and the ingredients to prepare the recipes.

    This is the best cookbook ever!!

    I have had this cookbook for about 2 months and absolutely love it!! Finally I've found a cookbook that offers healthy yet delicious recipes that are easy to make. And the ingredients are easy to shop for, and are probably already in your home. Oh, and the recipes are very affordable. My husband and I have had many of the recipes in the book and all of them have been delicious. Also, I've found the portion sizes to be very generous, especially for a 'diet' book. I love the creative combination of ingredients and the dishes have a ton of flavor! I definitely recommend this book. For the first time ever, I'm excited to cook for my husband and I and no longer dread planning a meal. Grocery shopping has even become more fun because I look forward to the new creations I will be able to try once I get home.

    BEST EVER!

    I have only had the book for about a week and have tried 3 of the recipes-LOVED them all and am so excited to try the rest of them. This is the best investment I have made in a long time. I am an exercise specialist in a corporate fitness center and can't wait to share the recipes with my clients.
