3 medium-sized cucumbers
3 tablespoons salad oil
1/4 cup water
5 teaspoons soy sauce
1/4 teaspoon sugar
1. Peel and cut each cucumber in half length-wise; remove seeds. Then cut cucumber halvesinto 1-inch chunks.
2. In 4-quart saucepan over high heat, in very hot salad oil, cook cucumbers, stirring quickly and constantly, until evenly coated with oil. Add water, soy sauce, and sugar. Reduce heat to medium; cover and cook about 5 minutes, stirring occasionally, until tender-crisp.
