I purchased this eBook a few months ago and was surprised to see that almost every other recipe contained a "?" listed in front of the ingredients list. We're not talking about just for salt or pepper either. Many amounts of key ingredients (i.e. flour, eggs, etc) were simply not given. After finally being able to speak to someone in customer service whose first language was English, I had my money refunded but am still curious if the problem with the publisher has been resolved. Just like materials in print, I believe an electronic equivalent should also be proof read just as carefully before offering it for sale. Went out and bought the hard copy of the cookbook and it is a true classic.
I am purchasing this book today to replace the copy I purchased almost two decades ago. The original is falling apart from years of regular use in my kitchen. I raised three sons on these recipes, and they all are capable of cooking their favorites from this book. Over the years, Biba has taught me to master risotto and my husband to prepare pan roasted chicken that is divine. I have all of her books, but this was my first, and it remains my favorite.
Wonderful! Straight-forward...wonderfully illustrated with color photos. Recipe titles are given in both Italian and English including a short description about each dish. Recipes cover everything from basic pastas to seafood to vegetables to desserts...to soups, salads, antipasti and more. Truly a wonderful cookbook with some of my favorites being 'Scampi e Cape Sante alla Griglia' (Broiled Shrimp & Scallops), 'Tortellini col Ragu' (Tortellini with Bolognese Meat Sauce) and 'Dolce del Cantoncino' which is a wonderful cake that Biba states is 'from the famous Il Cantoncino restaurant in Bologna.' In this cookbook, Ms. Ciaggiano manages to present the perfect blend of good authentic Italian cooking, while still making it accessible to those of us who probably know more than the basic American about Italian cooking, but are by no means an all-out chef with the time, money and resources to start importing ingredients that we'll only end up using in one recipe anyways. I would definitely recommend this book.
