Overview

The recipes I have put together in this book are ones that come from my memories and my heritage. I've also included recipes that were given to me through the years from friends. My philosophy is that you don't always have to follow a recipe exactly. I've prepared and made changes to them because I found it fun and such a challenge to see what would happen to the taste if I added something different. To be a little daring in the kitchen and simply make something up that tastes good, is the icing on the cake.

I hope that you will enjoy trying some of my recipes. It isn't written in stone that you have to do exactly what the recipe says to do. Be a little daring with your cooking and add what you like. Let me know what you've done, so I can try it too!

I believe that cooking is an art form. Like creating beautiful pictures for people to admire, you're creating wonderful food for your friends and family to enjoy eating while they admire your talents.

    GREAT RECIPES!! I had the pleasure to enjoy eating Liz's wonderf

    GREAT RECIPES!! I had the pleasure to enjoy eating Liz's wonderful cooking when I lived in NC. I learned to make vasilopita, a delicious bread that makes great Christmas gifts. Spanakopeta is great for breakfast, lunch or dinner. 
     The baklava is to die for. I am so glad that she has published her recipes that are so delicious!

    DELIcious recipes!

    This is a delightful cookbook! I get hungry everytime I browse through this book ~ if you love baklava, you must try this one, it is wonderful!<BR/><BR/>I'm working on trying out every recipe & will keep you all posted on my favorites...

    Truly the best!

    It is hard to say which recipe I like the best because at one time I did not want any of it and now I cannot get enough. Liz is my mom and I took it all for granted---I wanted everything but her cooking 'hamburgers, pizza ,taco's, etc'. As I grew older I came back to my Greek Heritage and more importantly to Mom's cooking. I have eaten at Greek establishments all over the US and I really have to say mom's recipes are truly the best---I promise you, you will not find a better 'Baklava' then what is in this book,period! Her Spanakopeta is almost as good as mine but she did teach me how to make it so hers is not bad at all--the Salmon Supreme Ala Cream will leave you speechless,it is so incredibly good you will more then likely cook it again the next night just to make sure it was that good. It is a fantastic book on many levels as it was written with a true love for friends, family and food that is hard to measure. The minute this book came off the presses it took traction, first with local food articles then a Nationally Syndicated food article that printed coast-to-coast, and a Syndicated TV segment. Opa continued to gain momentum and received 'The Sappi Paper Top 100 Printed Books Award' in North America in 2007--top 100 printed books in the U.S.! Liz was recognized at the National Greek Shrine 'really a big deal for a greek girl' and to top all of this off you are now reading 'Opa' reviews on the Barnes and Nobles website---to be with Barnes and Nobles is my mom's second dream come true, the first one was to write her own cookbook.The success of Opa is because the recipe's are real, the stories are true and her international following will vouch for how wonderful a person Liz is and just how great her food taste. We hope you will treasure 'Opa' as much as our family does and we hope you will use it often in your culinary endeavors! Opa!!!!! and Enjoy, Todd

    My favorite cookbook!

    You have eaten Greek Food in restaurants and thought ¿I could never cook like this¿ - but you can!. Liz White presents ¿Opa¿, her love laden Greek Cookbook full of recipes from home. Anyone can learn Greek cooking from Liz, just by trying the recipes in ¿Opa¿. I love Greek food and love to cook, but I learned the true secret ingredients from Liz¿s recipes that make Greek food authentic. It doesn¿t take lots of money or extra culinary skills - it just take the right recipe. Liz gives you everything you need to know to make a Greek Festival of dishes right in your own home. My husband wanted Baklava instead of birthday cake. Thanks to the recipe in ¿Opa¿, I learned how easy it was to make the best birthday dessert my husband ever had. Whenever we have company over, my daughter begs me to make the Greek Potatoes with Horseradish Sauce. We just build the rest of the meal around it. Love Spanakopita? The restaurants don¿t want you to know how easy it is to make at home! ¿Opa¿ shows you how. When I get in a rut over what to make for a weeknight dinner, I throw in a main dish or just one side dish from ¿Opa¿ and my family thinks that I have created something unique.     Thanks for sharing your treasured recipes

    I have not had the opportunity to work my way through all of the recipes, but your baklava recipe makes the best dessert I've ever had in my life! Can't wait to try more.

    Love This Cookbook...

    You do not have to be Greek to love this book!! It's Greek and American food at it's finest.......not what you get at your local restaurant. Try the Greek Salad and Salmon a la cream.....top it off with Spanakopeta, amazing. Opa is not only a beautiful tabletop book but full of family and easy to prepare food. The best part is you can email Liz herself for help!!! you can't do that with other cookbooks!!

    Opa

    My roommate owns a copy of this cookbook and I steal it every once in a while to make some of the recipies myself. In truth, I like it better when my roommate makes the recipes so I can try them without having to cook it myself! And the smells are wonderful!

    I have always been proud to say my Grandmother is not only a brilliant woman and cook, but my best friend as well this cookbook only confirms those sentiments! To be totally honest, I initially urged my YiaYia not to publish a book consisting of all our sacred family recipes, for it would be immoral 'on a familial level' of her to share our 'legacy' with the rest of the world! Disregarding my dismay in the matter, she did so anyway and I have to admit, regardless of the fact that I am a firm believer in keeping family tradition sacred, I am now an advocate for this cookbook and am very fulfilled in knowing that our 'legacy' is being shared in such a magnificient way! I am also so very proud of her courage, hard-work, commitment and dedication to such a profound publication as will you be upon your purchase. I give the book *Infinity Stars* and urge anyone who has yet to obtain a copy to do so immediately!!

    Opa: A Wonderful Collection of Inspired Greek and Authentic Greek Cuisine

    I just happened to stumble upon this cookbook while shopping at the Fresh Market in Florida. What drew me in was the spanakopeda sample that the author and her lovely grand-daughter made and were passing out as you exited the store. After my first bite I was hooked and HAD to have the recipe. I ended up buying A SIGNED COPY of the cookbook! I've made it a point to cook at least one recipe a week ever since (and that was last June of '07!) My husband and children love the food, and my guests LOVE the spanakopeda, as I make it EVERY TIME someone comes to visit. (It's so easy!) I am thrilled to see that the book is now being offered at Barnes and Noble- I can't wait to buy one for my Mom and mother-in-law!! It makes a great gift!

    True inspiration.

    I have been looking for greek recipes and have found them! Mrs. Liz has also inspired me to impart cooking skills to my two girls by spending more time in the kitchen with them. I also enjoyed reading her stories of love and sacrifice by her Greek grandparents. Great recipes and a good read too!

    I love making receipes from this wondeful greek cookbook

    I know Liz and she is a good freind of mine. She has delicious receipes in her cookbook and I have tasted her wonderful cooking. It is well worth the book.
