Recipe

2/3 c. shredded Cheddar cheese
½ c. deli ham, chopped
1 carrot, peeled and shredded
1 stalk celery, chopped
2 to 3 t. sweet pickle relish
1/3 c. sliced green olives
8-oz. container spreadable cream cheese with chives, softened
1 loaf sliced whole-wheat bread

Combine shredded cheese, ham, carrot, celery, pickle relish and olives in a bowl; mix well and set aside. Spread each slice of bread with cream cheese on one side and sprinkle with about 1/3 cup shredded cheese mixture. Top with another slice of bread. Trim off crusts, if desired; slice each sandwich into quarters. Wrap with plastic wrap and refrigerate several hours or overnight. Serves 6

    Yet another disappointing cookbook from Gooseberry Patch. I think they're just churning them out quickly to sell the Nook version, which is what I have. It was only ninety-nine cents, but still not worth it, considering the space it takes on my Nook Tablet. My usual gripe still stands: There's an interactive index but it's inconveniently placed in the back of the cookbook. Then there's the actual recipes. If you really want to hit the road, you need to plan way ahead and forget your budget when you make most of them. I'm not sure when you're supposed to make the Zippy Chicken Casserole, but it won't be on the road unless you have a fully functional kitchen. You need boneless chicken breasts and mashed potatoes as the base ingredients. Oh I almost forgot......You need a microwave too! Then there's the Slow-Cooker Smothered Stead recipe. It should have been in the Slow Cooker cookbook. Maybe it is. I'm disappointed in not only the recipes but in the way this is marketed. It certainly isn't for cooking on the road! If you plan to cook them before, like for a picnic, you'll need lots of time and money. You'll also be pretty tired from cooking and cleaning the kitchen before you hit the road.
