Parker (The Girl Who Had Everything) offers 60 delectable creations suitable for hearty breakfasts as well as elegant dinners. Her breakfast dishes begin with an old favorite, buttermilk pancakes, and move on to pumpkin pancakes with cinnamon syrup, whole-grain griddle cakes with cranberry syrup and sour cream pancakes with blueberry syrup. Paprika pancakes filled with veal and sauced with sour cream, eggplant cakes with pine nuts, seafood torta sporting crabmeat, shrimp and lobster, and corn crepes can serve as first courses, side dishes or even entrees. Does anyone really need a cookbook devoted entirely to pancakes? Sections on breakfast, savory, and dessert pancakes include traditional favorites such as Blueberry Pancakes and Buckwheat Cakes; crepes of all types, from Basic Dessert Crepes to the crepe ``purses'' popularized by trendy restaurants; and more esoteric selections, such as Blini with Smoked Salmon. Parker has cooked in France and is a contributor to Gourmet ; her recipes are fine but unexceptional, and most of them are readily found elsewhere. JS
