Passover Lite Kosher Cookbook is the answer to this challenge. Not only is every recipe kosher for Passover but also interesting and delicious. An overview of time-saving tips and general cooking advice will make Passover meal preparation much less arduous and cooking the rest of the year more healthy.

Passover Lite Kosher Cookbook is a collection of nearly two hundred delicious recipes—traditional dishes as well as contemporary foods—that meet the Passover dietary laws but avoid all those whole eggs and fat. In addition, most of the recipes are sodium reduced. The reader will also find cooking tips and sample menus. Each recipe includes nutritional counts of calories, fat, carbohydrates, cholesterol, and sodium. And the recipes are labeled "meat," "dairy," or "pareve" for kosher meal planning.

Gail Ashkanazi-Hankin provides the reader with a wide range of recipes and transforms them with a lighter, lower-fat approach. She has been modifying recipes for special diets since she began cooking at the age of ten. Named by the Rocky Mountain News as "Best Cook in the West" (March 1986), the author and illustrator lives in Denver, Colorado.
